Winemaking in Mallorca is part of its culture and landscape. The centre of the island is home to the winemaking region of the Binissalem Designation of Origin, where villages such as Santa Maria del Camí, Sencelles and Santa Eugènia are brimful of winemaking history and tradition. Below we offer some tips for enjoying the best wines with this Designation of Origin, as well as suggestions for combining wine-tasting with other activities.

The villages making up this winegrowing region are located in an area of gentle slopes, enjoying a Mediterranean climate protected from the northern winds by the Serra de Tramuntana Mountain Range. They are surrounded by extensive vineyards growing local varieties of grape.

Wines with the Binissalem DO include young and oak-aged reds, whites, rosés and sparkling wines. The most famous and widely produced wines are the reds, which contain a minimum of 30% Manto Negro, a local variety whose characteristics include a fairly light colour and fruity aromas that develop to giveslightly jammy notes.

The whites, produced with at least 50% Moll variety grapes, have predominantly fruity aromas, reminiscent ofgreen apple and dried fruit, with hints of apricot and bitter almonds. On the palate, they are fresh and perfectly balanced between acid and sweet, with an elegant, slightly bitter finish.

There are 13 wineries currently covered by the Binissalem DO, some of which can be visited, providing an excellent opportunity to learn about the winemaking process and discover villages with a cherished architectural and cultural heritage.

Wine is always a feature of local fiestas and may sometimes be the star, as is the case with the Festes des Vermar (grape harvest festival), held in Binissalem every September. A week dedicated to wine, during which you shouldn’t miss the chance to try fideos des Vermar, a traditional festive dish combining noodles with lamb, sobrasada sausage and spices - accompanied, of course, by a glass of wine.

Another unmissable event is Wine Days Mallorca, organised by the Binissalem DO - nine days in May set aside for enjoying wine, as well as cultural and gastronomic events. The festival includes excursions, winery open-days, visits to markets, tastings and the Wine Days Mallorca Fair, where wine is enjoyed alongside the very best snack foods from local food trucks. And in the evening, you can enjoy concerts given in public gardens, wineries, auditoriums and churches.

You can also discover the DO’s territory by taking tripsthat combine winery visits with a stop at one of the superb restaurants serving traditional cuisine. The best way to savour the landscape.
