Jaume Crespí carries the countryside in his blood, despite the hardship involved. At Can Gori, in Sa Pobla, he tends the olive trees passed down to him by his father, producing an extra virgin olive oil obtained from the Arbequina variety, and with a quality that is characteristic of the quality of olive oil produced in Mallorca.

Serra de Tramuntana ever-present, Jaume Crespí produces Can Gori oil, made using almost 100% Arbequina olives, for a very smooth, fruity and unique taste.

Jaume was born and grew up in the countryside, and feels deeply rooted in the fora vila life, something that connects him to his mother and his father. “It’s a very exciting world, but a very complicated one,” he says.

Jaume’s father left him an olive plantation. At first he harvested the olives and took them to the co-operative to make oil, but almost immediately he decided to get more involved. He bought the tafona (oil press), and began bottling and selling the oil himself. “It’s the best way to defend the product.” His oil is made using integrated farming methods.

Today, Jaume sells direct to customers, can be found at fairs and markets around the island, and exports a small amount to Germany.

Despite the difficulties, he plans to plant more trees to increase production, though always putting quality before quantity. “In Mallorca we make oil ‘green’, which means fewer litres of oil per kilo of olives, but the quality is much higher.” Olis Can Gori has Oli de Mallorca Designation of Origin status.

The soil at Can Gori is excellent for olive trees, as it is rich in water, though Jaume needs to be watchful to prevent diseases and protect them from fungi, which can easily appear in the kind of hot, humid climate that Mallorca is known for.

Jaume Crespí would like people to value local produce much more, because of everything it represents. It’s not about price.
