Local product Greixonera

The Greixonera is a dessert, which is prepared with ensaimada, milk, eggs and sugar. It is part of Ibiza's delicious cuisine.

The Greixonera takes its name from the pot in which it was formerly prepared, the traditional clay pot of the Balearic Islands.

Its origin lies in the need to use the ensaimadas of the preceding day; the Greixonera looks like a pudding and has the same texture. It is prepared with eggs ensaimadas, milk, sugar, lemon, cinnamon and butter.

The preparation is easy; the milk is heated in a pot and boiled with the lemon peel, the sugar and the cinnamon stick. Once the milk begins to boil, it is taken from the fire and the cinnamon stick and the lemon peel are removed. The ensaimadas are cut into pieces and added to the milk and eggs. The sugar is heated until it caramelizes; then it is poured onto the bottom of greixonera. The mixture of milk, eggs and ensaimada is added, and the whole baked at 170 degrees heat for about 45 minutes.

Every moment of the day is good to eat this delicacy, at breakfast, as an afternoon snack or as a dessert of a good lunch or dinner with a little sip of Hierbas Ibicencas herbal liqueur.
